1Moderate papain addition improves the physicochemical,microbiological,flavor and sensorial properties of Chouguiyu,traditional Chinese fermented fish显示文摘The objective of this study was to investigate the effect of papain on the physicochemical and microbiological properties,volatile compound profiles,and sensorial attributes of Chouguiyu.Papain was applied at a dose of 10,50,200,400 U/g fish.Results showed that papain addition improved the release of free amino acids,essential amino acids,eicosapentaenoi acid(EPA,C20:5n3),and docosapentenoic acid(DPA,C22:5n6),respectively.Lower biogenic amines content,higher the volatile compound concentrations and relative abundance of Lactobacillales were also observed.Further results showed that the papain dose group decreased the fermentation time from 10 to 7 days while good organoleptic quality was remained,especially in the 200 U/g dose group.The redundancy analysis(RDA)showed a high correlation between Lactobacillus and the key volatile compounds in the 200 U/g and 400 U/g groups,which indicated that Lactobacillus could contribute to the fatty flavor.In summary,proper papain addition(i.e.200 U/g or 400 U/g)could reduce biogenic amines contents and maintain acceptable sensorial properties of Chouguiyu in a shorter fermentation time.Wenhuan Xu Cuicui Jiang Aoxue Liu Ruiqi Bao Wenqing Wang Zuoli Zhang Chaofan Ji Huipeng Liang Sufang Zhang Xinping Lin 2022Food Bioscience2022,46,2:2
2How urbanization affect the ecosystem health of Tibet based on terrain gradients:a case study of Shannan,China显示文摘Urbanization has significant impacts on ecosystem health(ESH)by affecting land-use patterns.The evaluation of the ESH and the spatial correlations between human interference provides an insight into sustainable development as a response to potential ecological degradation if ESH is threatened by further urbanization.We applied the Vigor-Organization-Resilience-Services(VORS)modelto detect the responses of ESH of Shannan Prefecture in the Tibet to urbanization from 1990 to 2015,based on different levels of terrain gradients.The results show that the ESH of the most areas in Shannan reaches the levels of highest health and average health during the study period.By 2015,the area proportion at the highest health level increased by 0.68%,while that of degraded level decreased by 1.51%.Overall,the ESH of areas tends to shrink at higher-level TGs,and urban sprawl with ESH shrinking existed in middle-level TGs in Shannan.Furthermore,a significant spatial aggregation effect was found concerning that low ESH-high CUL type is mainly distributed on the middle-level TGs with dense human population.The results highlight the needs to rationally organize urbanization process in plateau regions based on different TGs,which contribute to maintain ESH advancing people livelihood improvement.Ji Zhang Yu Shi Chaofan Xian Lu Zhang Ziying Zou 2022Ecosystem Health and Sustainability2022,8,1:1

4Effects of prebiotics on the fermentation of traditional suancai of Northeast China显示文摘Suancai is a traditional fermented vegetable widely consumed in Northeast China.In this study,different prebiotics were used to improve the quality of suancai.Four prebiotics(inulin(INU),xylooligosaccharide(XO S),galactooligosaccharide(GOS),and stachyose(STA))were shown to reduce the pH value and increase the content of total titratable acidity(TTA)in suancai,while the contents of most organic acids were also increased.The addition of prebiotics had significant effects on the bacterial microbiota during the suancai fermentation process.All prebiotics were shown to contribute to the growth of Lactobacillus.The suancai sample with fructooligosaccharides(FOS)had the highest relative abundance of Lactobacillus.Besides,INU and XOS could increase the abundance of Weissella.To evaluate the quality of suancai fermented with prebiotics,profiles of volatile flavor compounds(VOCs)and free amino acids(FAA)were analyzed.The prebiotics affected the VOCs and FAA profiles via transforming the bacterial microbiota.In addition,the addition of prebiotics also changed the taste profiles of the suancai samples.This study is among the first attempts to reveal the effects of different prebiotics on suancai fermentation,and the findings provide a foundation to develop new ways for improving the quality of suancai.Mingwei Zhao Xinying Cao Yuzheng Wu Sibo Zou Zhigao Li Xinping Lin Chaofan Ji Liang Dong Sufang Zhang Chenxu Yu Huipeng Liang 2024Food Science and Human Wellness2024,13,3:0
5Demystifying the Salt‑Induced Li Loss:A Universal Procedure for the Electrolyte Design of Lithium‑Metal Batteries显示文摘Lithium(Li)metal electrodes show significantly different reversibility in the electrolytes with different salts.However,the understanding on how the salts impact on the Li loss remains unclear.Herein,using the electrolytes with different salts(e.g.,lithium hexafluorophosphate(LiPF_(6)),lithium difluoro(oxalato)borate(LiDFOB),and lithium bis(fluorosulfonyl)amide(LiFSI))as examples,we decouple the irreversible Li loss(SEI Li^(+)and“dead”Li)during cycling.It is found that the accumulation of both SEI Li^(+)and“dead”Li may be responsible to the irreversible Li loss for the Li metal in the electrolyte with LiPF_(6)salt.While for the electrolytes with LiDFOB and LiFSI salts,the accumulation of“dead”Li predominates the Li loss.We also demonstrate that lithium nitrate and fluoroethylene carbonate additives could,respectively,function as the“dead”Li and SEI Li^(+)inhibitors.Inspired by the above understandings,we propose a universal procedure for the electrolyte design of Li metal batteries(LMBs):(i)decouple and find the main reason for the irreversible Li loss;(ii)add the corresponding electrolyte additive.With such a Li-loss-targeted strategy,the Li reversibility was significantly enhanced in the electrolytes with 1,2-dimethoxyethane,triethyl phosphate,and tetrahydrofuran solvents.Our strategy may broaden the scope of electrolyte design toward practical LMBs.Zhenglu Zhu Xiaohui Li Xiaoqun Qi Jie Ji Yongsheng Ji Ruining Jiang Chaofan Liang Dan Yang Ze Yang Long Qie Yunhui Huang 2023Nano-Micro Letters2023,15,12:0
